Crinkle Top Brownies

Guys… I finally did it! These are THE BEST Crinkle Top Brownies made GLUTEN FREE AND VEGAN! I’ve been trying for the longest time to make the perfect brownie that doesn’t use eggs, dairy, or gluten. This was a difficult process, given that regular vegan brownie recipes still use all purpose flour and gluten free brownie recipes still use eggs to achieve the flavors and textures of a regular brownie. And no, I was not going to cheat by using gluten free all purpose flour 😌 BUT with many trials… some may say too many haha… I finally did it! There are two secret ingredients that give this brownie it’s irresistible crinkle top and classic fudgey interior. These did not last long in my house, be sure to give these a try!

Best-Ever Brownies

 

  • 145 grams coconut oil
  • 180 grams vegan dark chocolate
  • 1/2 cup aquafaba
  • 3/4 cup coconut sugar
  • 1/4 cup almond butter, smooth and runny
  • 1 tbsp vanilla extract
  • 1 tsp espresso powder
  • 1 1/4 cup chickpea flour
  • 1/4 cup cacao powder
  • 1/2 tsp baking soda
  • 1/2 cup vegan chocolate chips

 

Preheat oven to 325°F. Lightly grease or line an 8×8inch baking tin. Set asidePlace the coconut oil and chopped chocolate together in a microwave safe bowl. Melt in 30 second increments whisking after each segment until the chocolate is completely melted and smooth. Once melted set aside to cool.In another large mixing bowl beat the aquafaba and the coconut sugar  together with an electric mixer until thick and shiny. Best in the almond butter, vanilla extract, espresso powder, and the melted chocolate mixture. Stir in the chickpea flour, cocoa powder and baking soda. Mix until you have a thick, fully mixed batter. Stir in the chocolate chips. Pour the batter into the prepared baking tin. Bake for 30 minutes and then insert a tooth pick into the center of the brownies to check if they're done, and then remove from the oven. (PRO TIP: It is okay for the toothpick to come out slightly wet! Thus ensures the brownies will be fudgey, since they will continue to cook as they are taken out of the oven. No one likes a dry brownie!) Let the brownies cool in their tin completely before slicing. Enjoy!
