Even though pumpkin will always have my heart during the Autumn season, I’ve come to like apple desserts too. Apples were hardly used in baking at my house, but these Apple Blondes with Cinnamon Maple Glaze definitely changed that! Made with nutty browned butter, salted apple butter, cinnamon, and nutmeg. Then generously glazed with a sweet, thick, and creamy cinnamon maple glaze. There’s really nothing not to love about these autumn spiced apple blondies, so make sure to give them a try!
Apple Blondies with Cinnamon Maple Glaze
- 1/3 cup coconut butter
- 1/3 cup coconut oil
- 1/2 cup apple butter
- 2/3 cup coconut sugar
- 1 flax egg (2 tbsp of ground flaxseed + 3.5 tbsp of water)(can sub regular eggs)
- 1 tbsp vanilla extract
- 1 cup oat flour
- 1 1/4 cups almond flour
- 1 tsp baking powder
- 1 tbsp cinnamon, divided
- 1/2 tsp grated nutmeg
- 1/2 tsp salt
- 2 apples (I used golden delicious, but you can use honey crisp or even Granny Smith)
Preheat the oven to 350°F in line a 9 x 13” baking dish with parchment paper.Add the coconut oil and butter into a small sauce pan over medium heat, stirring until it smells toasted and turned a golden brown color, about five minutes. Remove from heat and add to a medium bowl.Stir and the apple butter and coconut sugar. Then whisk in the flax egg and vanilla. Add the flour, baking powder, 1/2 tbsp of the cinnamon, nutmeg, and salt, mixing until just combined. Spread the dough out into the prepared dish. In a bowl, toss the apples with 1 tbsp coconut sugar and the remaining cinnamon. Evenly sprinkle the apples over the dough. Transfer to the oven and bake for 25-30 minutes, just until set in the center. If there is liquid in the center, swirl it around the pan, then bake another 5 minutes. Let cool.
Meanwhile, make the glaze.
Cinnamon Maple Glaze
- 1/2 cup powdered monk fruit sweetener
- 2 tbsp maple syrup
- 2 tbsp plant milk
- 1/2 tsp cinnamon
- Pinch of flaky sea salt
Whisk together all the ingredients until a smooth glaze forms. Drizzle the glaze over the bars. Let set for 5 minutes. Cut into bars and enjoy!
