Chocolate Sunbutter Rice Crispies

The heat has been crazy this week, which means it’s way too hot to be turning on the oven. But that doesn’t mean you can’t satisfy your sweet tooth! These Chocolate Sunbutter Rice Crispies are the perfect no-bake treat! Think crisp, chewy, sweet puffed rice base with delicious nuttiness from the sun butter, which is a paste (like peanut butter) made from sun flower seeds. The base is coated with a thick layer of melted dark chocolate and a sprinkle of sea salt. Yum! Gluten free, nut free, refined sugar free, and vegan. Every bite is truly delicious!

Chocolate Sunbutter Rice Crispies

 

  • 1 1/4 cup sunflower butter (no sugar added)
  • 1/3 cup honey
  • 1 tsp pure vanilla extract
  • 3 cups crispy rice cereal
  • 1/2 tbsp ground cinnamon
  • 10 ounces dark chocolate

 

In a large bowl, mix the sunflower butter, honey, and vanilla with a spatula until smooth. Then stir in the crispy rice cereal and cinnamon. Line an 8 inch baking pan with parchment or foil and pat the mixture into the pan. Melt the chocolate in a microwave safe bowl and microwave for 30 seconds, stir, microwave for an additional 30 seconds, and start again. Once completely melted, spread the chocolate mixture evenly over the crispy rice base and put in the freezer to sit for 30 minutes. Remove, sprinkle with sea salt, and cut into squares. Serve and enjoy!
