Let’s challenge ourselves to eat MORE plants this year πΏ Start off with this NOURISHING GOLDEN BEET SALAD!! Packed with fiber, phytonutrients, and amazing vitamins, this salad is not only incredibly delicious, but also good for your body ππ½ It’s anything but boring, and my whole family absolutely loved it! A bed of fresh beet greens, layered with sweet golden beets, refreshing cucumber, and ruby red pomegranates, with crunchy roasted pecans pulling it all together.
- 4 cups beet greens, chopped
- 2 medium golden beets
- 1 cup cucumber, thinly sliced and quartered
- 1/2 cup pomegranate arils
- 1/2 cup pecans, roasted
Wash all the vegetables and cut off the stems of the beets. Place the beets in a steamer over the stovetop, and steam until soft, about 10 to 15 minutes. Take out the beets and thinly slice them. You could also quarter them if you’d like smaller chunks. Arrange the beet greens in a salad bowl and top with the beets, cucumber, pomegranates, and chopped pecans. Now prepare the vinaigrette.
Vinaigrette:
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 2 tbsp Dijon mustard
- 1 tbsp maple syrup
- 1 tsp grated garlic
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp red pepper flakes
Whisk together all the ingredients and drizzle over the salad. Enjoy!!
