If I am going to have a salad, it has to be loaded with different textures and flavors--in other words, it can't be boring haha! This Toasted Walnut Salad with Balsamic Glazed Beets checks those boxes. Soft bed of greens layered with crisp cucumber, tender beets roasted with balsamic vinegar and honey, and topped with crunchy, nutty walnuts toasted to perfection. It's all drizzled with the balsamic reduction left over from the roasted beets. YUM!
- 1 bunch of fresh beets
- 2 tbsp balsamic vinegar
- 1 tbsp raw honey
- 1/2 cup walnut halves
- leafy greens
- sliced cucumber
preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment. Wash and cut the beets into quarters. Pour them into a medium bowl and toss with the honey and balsamic. Bake for 20 minutes, until tender, turning halfway through. Place the walnuts on a separate baking sheet and bake for 10 minutes, tossing halfway through. Once the beets and walnuts are done, assemble the salad. On a serving dish, layer on a bed of greens, the sliced cucumbers, the roasted beets, and crushed walnuts. Drizzle on the balsamic glaze as a dressing. Serve and enjoy!
