Crunchy Thai Peanut Salad

Crunchy Thai Peanut Salad! A staple in my household that never disappoints! Crisp red cabbage tossed with shredded carrots and sliced celery for color, topped with sweet, juicy raisins and chopped peanuts for an extra crunch. Everything is tossed with an easy peanut butter dressing that is simply irresistible! Sweet, salty, savory.. there perfect combos a salad can have! 

Crunchy Thai Peanut Salad 

 

- 1/2 head of purple cabbage, thinly sliced 

- 2 large carrots, shredded 

- 2 celery stalks, diced 

- 2 cups powder greens 

- 1/4 cup raisins 

- 1/4 cup chopped peanuts 

- cilantro for garnish 

 

Peanut Butter Dressing

 

- 1/2 cup creamy peanut butter

- 3 tbsp apple cider vinegar 

- 2 tbsp coconut aminos 

- 1 tbsp Thai red curry paste 

- 1 tsp minced garlic 

- 1/4 tsp black pepper 

- 1/4 tsp salt 

- water to thin 

 

Add the cabbage, carrots, celery, greens, raisins, and chopped peanuts to a large salad bowl. Whisk together all the dressing ingredients and add one tablespoon of water at a time until desired consistency is reached. Toss the dressing with the salad until evenly coated. Garnish with extra chopped peanuts and cilantro if desired. Serve and enjoy!!
