Vegan Pistachio Ice Cream
- 2 1/2 cups coconut milk, full fat
- 2 large avocados
- 1 cup raw pistachios, unsalted and unshelled
- 1 cup pitted medjool dates
- 1/2 tsp almond extract
Blend milk, avocado, pistachios, dates, and extract in a high speed blender until very smooth. Pour into a loaf pan and freeze overnight. The next day, either let soften for 10-15 minutes before scooping. Enjoy!
