Halva Chocolate Chunk Cookies
- 1 cup coconut sugar
- 2/3 cup coconut oil, melted
- 2 flax eggs (3 tbsp flax meal + 6 tbsp water)
- 1 tbsp vanilla extract
- 2 cups oat flour
- 3/4 cup crumbled organic halva
- 1 cup dark chocolate chunks
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup sesame seeds
In a large bowl, whisk together the coconut oil and the coconut sugar. Add in the flax eggs and vanilla, whisking until smooth. Sift in the flour, baking powder, baking soda, and salt, stirring until just combined. Fold in the halva and chocolate chunks until incorporated. Place the dough into the freezer for 30 minutes to 1 hour, until set. Scoop out into 2” balls and bake for 12-13 minutes, until golden brown and crispy. Allow to cook on baking tray for 10 minutes before transferring to a cooking rack. Enjoy!
