These wholesome Almond Butter Puffed Quinoa Chocolate Cookies are such a fun treat! They’re inspired by Hu Kitchen's chocolate bar flavor and are vegan, sweetened with fruit, and gluten free! But don’t let that fool you because they’re sooo good, give them a try!!
- 1 cup almond butter
- 1/2 cup dates
- 1/4 cup cacao powder
- 1/2 cup carbonated water
- 1/3 cup puffed quinoa
- 1/2 cup chopped chocolate (bonus points if you use hukitchen's almond butter puffed quinoa bars!)
- 1/2 tsp salt
- 1 tsp baking powder
- 1 tsp vanilla
Preheat the oven to 350°F and line a baking sheet with parchment paper.Pour the almond butter and the dates into a blender and blend until smooth.Add in the cacao powder, salt, baking powder, and vanilla, Blending until combined.Then pour in the carbonated water and blend on low until just combined. Scrape the dough into a bowl and fold in the puffed quinoa and chocolate chunks. Roll about 2 tablespoons of dough into a ball in place on a baking sheetBig 413 to 15 minutes and allow them to cool on a cooling rack. Enjoy!!
