Peanut Butter Eggs

PEANUT BUTTER EGGS—Reece’s has nothing on these 4 ingredient treats. Smooth creamy peanut butter with notes of vanilla, with coconut flour to bind. Shaped into egg shapes and dunked into rich dark chocolate! Super fun dessert to quickly whip up when your sweet tooth hits! The kids LOVE helping shape these and they’re just the perfect snack for Easter coming up.

Peanut Butter Eggs

- 3/4 cup peanut butter
- 3 to 4 tbsp coconut flour
- 1 tsp vanilla
- 1 cup chocolate chips

In a large bowl, mix together the peanut butter, coconut flour, and vanilla until a thick dough forms. If the dough is not workable, then add 1 extra tbsp of coconut flour. Take about 2 tbsp of dough and form it into an egg shape and place on a baking sheet and repeat. Once all the eggs are formed, move the baking sheet to the freezer. Meanwhile, melt the chocolate chips in the microwave in 30 second increments and stir in between each round. Once the chocolate is completely melted, retrieve the baking sheet from the freezer and coat each egg with chocolate. Once the shell forms, drizzle on extra chocolate to form a pattern, if desired.
