On Wednesdays we EAT pink! This Radicchio Goji Berry Salad would definitely be Regina George approved 😆 It’s fresh, bursting with bright flavors and diverse textures, from the sweet tang of the goji berries to the bitter crunch of the radicchio. It’s by far one of the prettiest dishes I’ve made to date, and is made with wholesome ingredients.
To make it, you’ll need
- fresh radicchio
- rainbow carrots (I used home grown)
- dried goji berries
- picked red onions
- sliced cherry tomatoes
- pink Himalayan sea salt
Combine all ingredients and drizzle with a simple raspberry vinaigrette! So tasty and fresh, and takes minutes to make.
