Refreshing and nourishing Broccoli Orange Salad with Creamy Yogurt Dressing! This is my subtle reminder that salads don’t just have to be a bed of leafy greens ;) it always feels so good to nourish your body with wholesome ingredients and this salad definitely does not disappoint. Broccoli salad is normally loaded with bacon and dairy, but this version is completely plant based and centered around fresh produce.
Broccoli Orange Salad with and Creamy Yogurt Dressing
- 2 large heads of broccoli
- 2 cups sliced cucumbers
- 2 cups sliced oranges
- 1 cup sliced red onion
- 1/2 cup pumpkin seeds
- 1/2 cup chopped dates
Yogurt Dressing
- 1/2 cup plant based yogurt
- 1/4 cup freshly squeezed orange juice
- 1 tbsp raw honey
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- Salt and pepper to taste
Make the dressing: Whisk together all the ingredients and set aside.
Make the salad: Chop the broccoli heads into small florets and place in a large salad bowl. Using a cheese grater, grate the broccoli stalks and add them to salad bowl along with the broccoli heads. Add in the sliced cucumbers, oranges, red onion, pumpkin seeds, and dates. Toss to combine and drizzle over the prepared dressing. Toss to coat and serve. Enjoy!
