She’s fresh, she’s vibrant, she’s all I could ever want in a salad!
This Shaved Zucchini Pesto Pistachio Salad is full of seasonal produce and super simple to make. Fresh green and golden zucchini from the garden, shaved into thin strips, tossed with sliced cherry tomatoes, red onion, and finished with crushed pistachios. Marinated in a herby pesto dressing, this salad comes together quickly yet is incredibly flavorful. Definitely a summer favorite!
- 2 medium zucchinis
- 1 cup cherry tomatoes, sliced in half
- 1/2 cup thinly sliced red onion
- 1/2 cup pistachios, roughly chopped
Dressing:
- 1/4 cup basil pesto
- 2 tbsp apple cider vinegar
- 2 tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- 1 tsp maple syrup
Whisk together all the dressing ingredients and set aside. Meanwhile, wash your zucchinis and shave them into thin slices using a mandoline slicer or vegetable peeler. Toss in the cherry tomatoes and red onion. Pour over the dressing, tossing to coat. Garnish with the pistachios and serve. Enjoy!
