SUMMER is coming soon and so is ZUCCHINI SEASON! Yes, the two are one and the same in my mind😌 These delicious vegan/gluten free Zucchini Fritters are the perfect hello to summer! It uses up that beautiful summer veg in a healthy flavorful way—what more could you want? Shredded zucchini tossed with spices, herbs, and scallions, with oat flour to bring it all together. Formed into disks and air fried until golden brown and crispy. I love elevating these fritters into a meal by pairing them with vegan tzatziki and freshly made pita bread. Get all the Greek inspired flavors without leaving your home!
Zucchini Fritters
- 1 lb zucchini, grated
- 1 tsp salt
Fritters:
- 3/4 cup oat flour
- 1 tsp each pepper and garlic powder
- 2 scallions, thinly sliced
- 1/4 cup parsley, chopped
Preheat your air fryer to 400°F. Meanwhile, with a box greater, grate the zucchini and mix with the salt. Allow the zucchini to sit for at least 10 minutes to draw out the moisture. Place the zucchini in a cheese cloth and squeeze out the excess liquid. Add to a clean bowl, along with the flour, spices, scallions, and parsley. Mix well until the mixture comes together and binds well. Form the mixture into patties and placed into the air fryer. Spray with avocado oil and air fry for 15 to 20 minutes, flipping halfway through. Once golden brown and crispy, remove from the air fryer and serve immediately. I recommend serving with tzatziki sauce and fresh pita bread. Enjoy!
