Spiced Peach Pop Tarts with Honeycomb Glaze

It is finally peach season and I hope you’re as excited as I am because these Spiced Peach Pop Tarts with Honeycomb Glaze are so darn good! The pie crust is super simple and made with grain free flours, but you’d never guess because it is so flaky and crisp. The filling can be made with fresh or frozen peaches, roughly chopped and folded with honey and vanilla. All piled on to our pie crust, squares encrypt with a fork. Baked and drizzled with the irresistibly sweet glaze and honeycomb for the final touch. They’re perfect for summertime gatherings, but just as good paired with a cup of tea or coffee. 

Spiced Peach Pop Tarts with Honeycomb Glaze

 

Crust:

  • 1 1/2 cups almond flour
  • 1 1/2 cups cassava flour
  • 6 tbsp vegan butter, cold and cubed
  • 2 tbsp raw honey
  • 1 tbsp cinnamon
  • 1/2 tsp salt
  • Ice water

 

Filling:

  • 2-3 peaches, fresh or frozen
  • 2 tbsp raw honey
  • 1 tbsp cassava flour
  • 1 tsp vanilla extract

 

Glaze:

  • 1/4 cup powdered sugar
  • 1/4 cup raw honey
  • Water to thin
  • Honeycomb, for garnish

 

Preheat the oven 350 degrees F. In a food processor, combine the flours, raw honey, cinnamon, and salt. Pulse to combine. Pulse in the butter until it resembles a course mixture and slowly pour in enough ice water, tablespoon at a time, until a dough comes together. Divide into two, form into disks, and wrap with plastic. Place in the fridge to set for at least 30 minutes. Meanwhile, in a medium bowl, combine the peaches, flour, honey, and vanilla. 

Once the dough is chilled, roll each disks out into a large rectangle. Cut each sheet into 6 rectangles. Evenly divide the peach filling among half of the rectangles. Lay the remaining 6 rectangles over the filling and seal the edges by crimping with the back of a fork. Repeat until you have 6 tarts. 

Place on parchment lined baking sheets and brush the tops of the tarts with melted vegan butter. Transfer to the oven and bake the tarts for 15 to 20 minutes or golden brown. Let cool slightly.

Meanwhile, whisk together the glaze ingredients, using 1 tablespoon water at a time to thin the glaze as desired. Drizzle the glaze over the pop tarts. Garnish with a little honeycomb and enjoy!
