Made with oat flour, sweetened with coconut sugar, and loaded with chocolate chunks. Crisp edges and a pillowy soft interior—there’s nothing not to love about these cookies.
Chocolate Chip Cookies
- 2 cups oat flour
- 1/2 cup coconut oil, softened
- 1/4 cup coconut milk
- 1 flax egg
- 1 cup coconut sugar
- 1 tbsp vanilla extract
- 1 tsp instant espresso powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chunks
- 3/4 cup walnuts, chopped
in a medium bowl, Whisk together the flax egg, coconut oil, and coconut sugar until light and fluffy, about five minutes. Add and vanilla, coconut milk, and espresso powder and stir to combine. Pour in the salt, flour, and baking soda until just combined. Fold in the chocolate chunks and walnuts and place the cookie dough into the fridge and let it chill for at least 30 minutes. Meanwhile, preheat the oven to 350°F in line a baking sheet with parchment. What’s the deal is chilled, scoop the dough out by 2 tablespoons and roll into balls. Bake for 10-12 minutes. Allow them to sit for 5 minutes on the baking sheet before placing on a cooling rack. Enjoy!!
