An easy, gluten free recipe for Homemade Honey Graham Crackers--everyone's favorite snack! Made with ground oats, pure honey, and spices, these graham crackers are perfect for when you're craving something sweet but is made without gluten and refined sugars! With notes of cinnamon and honey, these crackers are baked until crisp, and dare I say, better than storebought! Ready to eat as is, paired with s'mores, or even used as a base for cakes (like this amazing Mango Float Cake) and pies!
Honey Graham Crackers
- 1/3 cup honey
- 2 tbsp olive oil
- 1 tbsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup oat flour
- 1/4 cup cassava flour
- 1 tbsp flax meal
Preheat the oven to 350 F and line a large baking sheet with parchment paper. In a medium mixing bowl, whisk together the honey, oil, baking soda, salt, and cinnamon until well combined and smooth. Add in the oat flour, cassava flour, and flax meal and mix until the completely incorporated. Place a sheet of parchment paper on the countertop. Place dough in the center and then place another sheet of parchment paper on top of the dough. Working from the center out, roll the dough into a large rectangle about 1/16-inch thick. If you have any difficulty rolling the dough, place it in the fridge to chill for 10-20 minutes and then try again. Use a pizza cutter 2 inch rectangles and space crackers apart to allow for spreading. Continue rolling out and cutting remaining dough until you have used it all up. Prick each graham cracker with a fork and bake for 10-14 minutes or until slightly firm and darker in color. Let cool for 5-10 minutes on the baking sheet, then gently transfer to a cooling rack.
