HEALTHY VEGAN SNICKERS!!! Guys, this one’s by far one of my best treats to date. Lightly roasted peanuts and sweet medjool dates are blended to make a sweet and salty crust, layered with a lusciously creamy medjool date caramel, all covered in smooth dark chocolate with a sprinkle of sea salt ✨Absolutely nothing not to love about these homemade candy bars. Especially since they’re easy to make, require no baking, have no processed sugars, and are even gluten-free! 

Healthy Vegan Snickers Bars

 

Base:


- 2 cups dry roasted peanuts
- 1 cup medjool dates, pitted
- 1/2 tsp vanilla
- 1/4 tsp salt


Caramel:


- 1 cup medjool dates, pitted
- 1/2 cup coconut milk
- 1 cup crunchy peanut butter, divided
- 1 tbsp vanilla extract
- 1/2 tsp salt
- 1 cup dry roasted peanuts
- 9 oz dark chocolate

To make the base, blend together the peanuts, dates, vanilla, and salt on high until completely combined and a sticky dough forms. Line a 8 x 8" with parchment paper and press the mixture evenly into the base of the dish using a spatula. For the caramel, put the dates, coconut milk, half cup of peanut butter, salt and vanilla extract in a high-speed blender and blitz until completely smooth. Transfer the caramel to a bowl and add the remaining half cup peanut butter, then stir well to combine. Using your spatula, spread the caramel on top of the base. Add the roasted peanuts on top of the caramel and press them down into the surface of the caramel using your spatula. Place in the freezer for at least 2 hours (overnight if possible). Remove the snickers slab from the baking tray and cut into 18 bars.
Place the bars back in the freezer while you prepare the chocolate coating. Melt the chocolate over a double boiler. Dip the bars into the chocolate and sit them on top of a cooling rack to set. Enjoy!!
