Soup for the soul. Easy Vegetable Miso Soup 🍲 Starting off the season with cozy, heat warming soup! It’s a comforting, hearty longevity meal that originated from Japan. It’s super easy to make and only requires a handful of ingredients.
Vegetable Miso Soup
- 1/2 cup daikon radish, quartered and thinly sliced
- 1 medium carrot, sliced to the same size as the radish
- 1 cup chopped Napa cabbage
- 1/2 cup sliced shiitake mushrooms
- 6 cups dashi broth (or vegetable broth)
- 3 tbsp red miso
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cubed tofu
- 1/2 cup radish greens (or other greens)
In a soup pot, combine all the ingredients except tofu and greens and bring to a boil. Immediately turn down the heat and simmer for about 15 minutes, or until the radish is soft. Add the tofu and greens at the very end and immediately turn off the heat. Taste and season to your liking with more salt or pepper. Serve and enjoy!
