Green Curry Paste

GREEN CURRY PASTE to make allll the green curry during cold nights. Curry is one of my favorite foods and the key to it is the paste. *enter in this homemade green curry paste* store bought versions don’t give justice to authentic green curry, which is why you MUST make your own from scratch. And it’s really easy too! Just throw everything in a food processor and use from there. Trust me on this one, it will elevate your green curry and you’ll never want to use store bought again!!

Green Curry Paste

 

- 4 serrano peppers
- 8 Thai green chiles
- 2 shallots, finely diced
- 2 lemongrass stems, trimmed and finely chopped
- 2 tbsp ginger, grated
- 7 garlic cloves
- 2 tbsp chopped cilantro, leaves and stems
- 1 tbsp lime zest
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground white pepper
- 1/4 tsp turmeric

 

Combine all ingredients in a powerful blender or food processor and blend to a fine paste, scraping down the sides as you go. If the paste is too thick, add one tablespoon of water at a time. However, it is best to use as little water as possible and you may not need any. Use to make Thai Green Curry! Best to use immediately. Otherwise, refrigerate for up to 2 days, or freeze for 1 month.
