There’s something comforting about a bowl of noodles, especially these Udon Noodles with Shiitake Mushrooms! Thick brown rice noodles with shredded cabbage for crunch and shiitake mushrooms for a savory flavor and meaty texture, all coated with a sweet and spicy sauce. The best part? It’s super easy to make and takes less than 15 minutes to whip up.
Udon Noodles with Shiitake Mushrooms
- 16 oz udon noodles
- 1 tbsp olive oil
- 4 scallions, thinly sliced
- 1 tbsp minced garlic
- 1 lb sliced shiitake mushrooms
- 1 cup cabbage, shredded
- 1/4 cup shredded carrots
Stir fry sauce:
- 1/4 cup coconut aminos
- 1 tbsp apple cider vinegar
- 1 tsp sriracha
Mix the stir fry sauce ingredients together. Set aside. Heat the oil in a large skillet over medium-high heat then add the scallions and garlic and let cook for 1 minute. Next add the shitake mushrooms, carrots, and cabbage, and cook until the vegetables are tender. Next add the udon noodles and stir fry sauce and mix evenly together to evenly coat the noodles. Once the noodles are coated well and everything is combined, serve, and garnish with extra scallions and sesame seeds if desired. Enjoy!
