If you've seen Disney's Luca, then you've undoubtedly seen the bright summery pasta featured in the movie. And it definitely tastes just as good as it looks! Tender pasta tossed in a fresh, vibrant basil pesto, dotted with creamy potatoes and crisp green beans. The perfect dinner on a summer evening!
- 2 cloves of garlic
- 1/4 cup raw walnuts
- 2 cups fresh basil, packed
- 2 tbsp nutritional yeast
- 1/2 tsp sea salt
- Extra virgin olive oil
- 4 servings of trenette (or any other stringy pasta)
- 2 cups green beans, cut into 1 inch pieces
- 2 cups golden potatoes, cubed
In a food processor or mortal, combine the basil, power greens, garlic, sea salt, yeast, and walnuts. Pulse on high until combined. Scraped on the side and drizzle in a few
tablespoons of olive oil until a thinner sauce comes together. Set aside and in a large pot, bring salted water to a boil. Pour in the past, beans, and potatoes and allow this to cook according to pasta instructions. The potatoes and green beans will be done after 10 minutes. Drain the pasta and veggies when softened and reserve a few tablespoons of the pasta water. In a serving bowl, add the pesto to the bottom with the pasta water and stir well. Toss with the pasta, green beans, and potatoes. Serve and enjoy!
