Crispy Jerk Tofu
Marinade:
- 4 scallions
- 1/4 olive oil
- 1/4 cup coconut aminos
- 2 tbsp apple cider vinegar
- 2 fresh habanero peppers
- 10 springs thyme
- 5 garlic cloves
- 2 1/2 tsp whole allspice
- 1 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 inch fresh ginger
Salad:
- 1 (18 oz) package tofu, frozen then thawed, and torn into chunks
- Sliced cucumbers
- Cherry tomatoes
- Powder greens
- Olive oil
- Sliced green onions
Preheat your air fryer to 400 degrees Fahrenheit. Blend together all the marinade ingredients and toss half of the marinade with the tofu. Allow the tofu to marinate for 10 minutes before placing in the air fryer. Cook for about 20 minutes, tossing every 5 minutes to ensure even costing. Remove from the air fryer and toss with an extra drizzle of the remaining marinade. Assemble the salad by starting with the power greens as the base, then layering on the tomatoes, cucumber, and sliced green onions. Drizzle the veggies in about a tablespoon of olive oil before topping with the crispy jerk tofu. Serve and enjoy!
