Spicy Plantain Burrito Bowls
Spicy Plantains:
- 3 large plantains, cut into coins
- 1 tsp ancho chili powder
- 1 tsp onion powder
- 1/2 tsp paprika powder
- Pinch of salt and pepper
- 1 tbsp olive oil
Preheat your air fryer to 400 degrees Fahrenheit. Toss the plantains with the spices and the oil. Place in the air fryer and cook for 10 minutes, flipping halfway through until golden brown and crispy.
Assemble:
- 1 cup cooked black beans
- Avocado
- Pickled nopales (cactus)
- Roasted Salsa
- Fresh mango, cubed
- Power greens

- Red onion, diced
- Cilantro, minced
