Teriyaki Lions Mane Spring Rolls with Sriracha Tahini Sauce

Lions mane mushrooms are incredibly versatile and are the perfect addition to these Teriyaki Lions Mane Spring Rolls! The rolls feature brown rice wrappers and noodles, with a variety of fresh vegetables. Avocado provides a rich flavor and creamy texture that balances nicely with the crunch of the red cabbage, bell peppers, and cucumbers. And the lions mane? They're marinated in a sticky sweet teriyaki sauce and add meaty texture to the dish. It's everything you want and need packed into a yummy spring roll! Don't forget the Sriracha Tahini Sauce--it brings the perfect level of spice and nuttiness. These are sooo good!

Spring Rolls:


- Brown rice paper wrappers

- 4 servings brown rice maifun (thin) noodles 

- 2 cups cucumber, thinly sliced

- 1 Red and Yellow Bell Pepper, thinly sliced 

- 1/2 head purple cabbage, shredded

- 1 large avocado, thinly sliced 

- 1 lb lions mane mushrooms, torn into chunks

- 1 tbsp olive oil 

- 2 tbsp coconut aminos 

- 1 tbsp apple cider vinegar 

- 1 tsp minced garlic 

- 1/2 tsp salt

- 1/4 tsp black pepper 

- Sesame seeds, for garnish 

 

In a medium pan set over medium heat, add in the olive oil. Once it begins to shimmer, toss in the lions mane and cook until golden brown, about 5-8 minutes. Once cooked, pour in the coconut aminos, apple cider vinegar, garlic, salt, and pepper. Stir constantly and cook until the mushrooms have caramelized, about 3-5 minutes. Remove from the heat and set aside. Meanwhile, cook your noodles according to package directions. Then arrange your vegetables, cooked noodles, and wrappers in a stationary manner. Take a wrapper, dip it  warm water for 30 seconds and transfer to a plate. Layer on some cabbage, cucumber, bell pepper, noodles, avocado, and the lions mane. Wrap like a burrito and place on to a servi plate. Repeat with the remaining wrappers until all the mushrooms and veggies have been used. Serve with the sauce and enjoy! 

 

 

Sriracha Tahini Sauce:

- 1/2 cup raw tahini 

- 2-4 tbsp sriracha (depending on desired level of spice)

- 2 tbsp apple cider vinegar 

- 1 tbsp minced garlic 

- salt and pepper to taste 

 

Whisk together all the sauce ingredients and taste for salt and pepper. Serve along with the rolls and enjoy!
