Making your day a *little* more special with these Chocolate Oatmeal Caramel Bars!! Everyone LOVES these bars—they didn’t even last a day in my house, they’re that good 👏🏽 Oats and almond flour form the base of the bar, swirled with maple for a touch of sweetness and cinnamon for warm spice. The bars are loaded with chocolate chunks and layered with gooey caramel in the middle. My family always asks for me to make these, and you’ll understand why once you give them a try!
Chocolate Oatmeal Caramel Bars
- 1/3 cup melted coconut oil
- 1/2 cup coconut sugar
- 1 flax egg (1 1/2 tbsp flax meal + 3 tbsp water)
- 1 tbsp vanilla
- 1 cup old fashioned oats
- 1 cup almond flour
- 1 tsp ground Vietnamese cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chunks
Gooey Caramel
- 1/2 cup coconut oil
- 1 cup coconut sugar
- 2 tbsp plant milk
- 1 tsp vanilla extract
- Sprinkle of sea salt
Preheat the oven to 350° F. Line an 8x8 inch square baking dish with parchment paper.
In a large mixing bowl, beat together the oil and sugar until combined. Beat in the flax egg and vanilla until creamy. Stir in the oatmeal, flours, baking soda, cinnamon, and salt, until the dough is moist and all the ingredients are combined. The dough will be crumbly. Mix in the chocolate chunks. Press half of the dough evenly into the bottom of a prepared baking dish. Bake 10 minutes. Meanwhile, make the caramel. In a medium pot, melt together the oil and sugar over medium heat. Gently boil, stirring constantly until thickened, about 5-8 minutes. Remove from the heat and quickly stir the plant milk and vanilla. The mixture will violently bubble, but continue to mix quickly. Once it dies down, mix in a pinch of salt. Remove the bars from the oven and pour the caramel over top. Crumble on the remaining oatmeal dough. Bake another 15 to 20 minutes or until the top is golden brown. Let cool completely, then sprinkle sea salt on top. Cut into bars and enjoy!
